Ingredients
  

  • 1 8-ounce box gluten-free penne pasta
  • ¼ cup extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • ¾ teaspoon dried oregano
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup crumbled feta cheese
  • ½ cup Kalamata olives pitted and halved lengthwise
  • ¾ cup diced tomatoes I love using Cherub tomatoes
  • 1 cup diced English cucumber

Instructions
 

  • Cook the gluten-free penne according to the package directions.
  • Drain and rinse with cold water. Allow to cool completely.
  • In a small bowl whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
  • Add the cooled pasta to a large mixing bowl.
  • Stir in the feta, olives, tomatoes, and cucumbers.
  • Pour the dressing over the salad and toss until evenly coated.
  • Serve immediately or refrigerate for 30 minutes before serving.
