Gluten Free Pickle Dip Grilled Cheese Sandwich

Ingredients
  

  • 4 ounces ? less fat cream cheese softened
  • 4 ounces whipped cream cheese
  • cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup crumbled cooked bacon or to taste
  • ½ cup finely diced dill pickles drained
  • 6 to 8 slices gluten free bread
  • 2 to 3 tablespoons softened butter or as needed

Instructions
 

  • Add the softened cream cheese, whipped cream cheese, cheddar cheese, mozzarella cheese, crumbled bacon, and diced pickles to a medium bowl.
  • Stir until all the ingredients are thoroughly combined.
  • Spread a generous amount of the filling over three to four slices of gluten free bread.
  • Top each one with another slice of gluten free bread.
  • Spread softened butter over the outside of both sides of each sandwich.
  • Heat a skillet over medium-low heat.
  • Place the sandwiches in the skillet and cook for 3 to 5 minutes, or until the bottoms are golden brown.
  • Carefully flip the sandwiches and cook for another 3 to 5 minutes.
  • Reduce the heat and cover the skillet briefly, if needed, to help the filling become warm and melted.
  • Remove the sandwiches from the skillet and let them rest for one to two minutes before serving.

Notes

  • This recipe makes approximately three large or four moderately filled sandwiches.
  • Pat the pickles dry before adding them to the filling.
  • Keep the skillet over medium-low heat to prevent the gluten free bread from burning.
  • Check the labels on the bread, bacon, pickles, and other packaged ingredients to ensure they are gluten free.
