Mediterranean Bowl Recipe

Everything tastes better in a bowl! This Mediterranean Bowl Recipe is easy to put together, loaded with healthy ingredients, and tastes amazing! And with a few shortcuts, it can be made very quickly! It’s naturally gluten free, you can make it low carb, and it can be made dairy free or even vegan as well! A win win for everyone!

Ingredients
  

  • 1 pound chicken breast tenderloins or beef strips
  • 1 large onion cut into strips
  • Shawarma Marinade optional
  • 2 cups cooked white rice
  • 1 cup hummus
  • 1 cup pico or diced tomatoes and cucumbers
  • 1 cup sliced kalamata olives
  • 1 cup feta cheese
  • tzatziki sauce, top with as much or as little as you like! link to homemade recipe above

Shawarma Marinade

  • 1/4 cup olive oil
  • 1 lemon, juiced or 2 tablespoons lemon juice
  • 1 tablespoon minced garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon crushed red pepper flakes

Instructions
 

  • Preheat oven to 400°F
  • Make shawarma marinade by mixing all marinade ingredients together
  • Toss beef or chicken strips with shawarma marinade and place on half of sheet pan
  • Place onion strips on other half of sheet pan, spray with avocado or olive oil spray
  • Place sheet pan in oven and bake at 400° for about 20 minutes until onions are tender and meat has cooked through
  • Cook rice according to package directions
  • Make tzatziki sauce if using homemade recipe (see above for link to recipe)
  • Start assembling your Mediterranean Bowl by adding cooked white rice to a bowl
  • Top with cooked chicken or beef and onions
  • Add hummus, pico, olives, feta, and tzatziki sauce
  • Enjoy immediately! Makes 4 servings
  • Store all leftovers in an airtight container in the fridge for up to 3 days

Serving size is 4 ounces meat, 1/4 of onion strips, 1/2 cup cooked rice, 1/4 cup hummus, 1/4 cup pico, 1/4 cup olive slices, 1/4 cup feta, 1/4 cup tzatziki sauce
