If you've ever watched Disney's Ratatouille, you probably remember the unforgettable scene where Remy transforms a humble peasant dish into something worthy of the finest restaurant in Paris. The message of the movie is simple but powerful: "Anyone can cook."

Ingredients
  

  • 1 tablespoon olive oil
  • ½ yellow onion diced
  • 2 cloves garlic minced
  • 1 15-ounce can crushed tomatoes
  • 1 teaspoons salt add more after if cooks if desired
  • 1 teaspoon dried oregano
  • ¼ teaspoon black pepper
  • 1 medium zucchini thinly sliced
  • 1 medium yellow squash thinly sliced
  • 1 medium tomato thinly sliced
  • 1 medium eggplant thinly sliced
  • 1 yellow bell pepper chopped
  • 1 red bell pepper chopped
  • Fresh basil leaves for garnish

Instructions
 

  • Preheat oven to 375°F.
  • Heat olive oil in a large oven-safe skillet over medium heat.
  • Sauté the diced onion until translucent, about 5 minutes.
  • Add the garlic and cook for 1 minute.
  • Stir in the crushed tomatoes, salt, pepper, and oregano.
  • Add the zucchini, squash, tomato, eggplant, and bell peppers. Stir until evenly coated.
  • Cover the skillet tightly with foil.
  • Bake for 30 minutes.
  • Remove the foil and continue baking for 15–20 minutes, until the vegetables are tender.
  • Garnish with fresh basil and serve warm.
