1 tablespoon olive oil ½ yellow onion diced 2 cloves garlic minced 1 15-ounce can crushed tomatoes 1 teaspoons salt add more after if cooks if desired 1 teaspoon dried oregano ¼ teaspoon black pepper 1 medium zucchini thinly sliced 1 medium yellow squash thinly sliced 1 medium tomato thinly sliced 1 medium eggplant thinly sliced 1 yellow bell pepper chopped 1 red bell pepper chopped Fresh basil leaves for garnish
Preheat oven to 375°F.
Heat olive oil in a large oven-safe skillet over medium heat.
Sauté the diced onion until translucent, about 5 minutes.
Add the garlic and cook for 1 minute.
Stir in the crushed tomatoes, salt, pepper, and oregano.
Add the zucchini, squash, tomato, eggplant, and bell peppers. Stir until evenly coated.
Cover the skillet tightly with foil.
Bake for 30 minutes.
Remove the foil and continue baking for 15–20 minutes, until the vegetables are tender.
Garnish with fresh basil and serve warm.
