That’s exactly the inspiration behind this recipe.

Instead of spending time perfectly arranging vegetables into beautiful concentric circles, we created a rustic, one-pot version that’s ready in under an hour and tastes just as incredible. It has all of the rich tomato flavor, tender vegetables, and aromatic herbs you love—but with a fraction of the work.

  • ½ yellow onion, diced
  • 2 cloves garlic, minced
  • 1 (15-ounce) can crushed tomatoes
  • 1 teaspoons salt
  • 1 teaspoon dried oregano

  • 1 medium zucchini, thinly sliced
  • 1 medium yellow squash, thinly sliced
  • 1 medium tomato, thinly sliced

Thinly Slice the Vegetables

Keeping your zucchini, squash, tomato, and eggplant slices thin allows everything to cook evenly and much faster.

Crushed Tomatoes

How to Make Remy’s Rustic Ratatouille

Step 1: Sauté the Aromatics

Preheat your oven to 375°F.

Heat the olive oil in a large oven-safe skillet over medium heat.

Add the diced onion and cook until translucent, about 5 minutes.

Stir in the minced garlic and cook for another minute until fragrant.


Step 2: Make the Tomato Sauce

Add the crushed tomatoes, salt, black pepper, and oregano.

Stir everything together until well combined.


Step 3: Add the Vegetables

Add the sliced zucchini, yellow squash, tomato, eggplant, and chopped bell peppers.

Stir everything gently so the vegetables become coated in the tomato sauce.


Step 4: Bake

Cover the skillet tightly with aluminum foil.

Remove the foil and continue baking another 15–20 minutes, or until all of the vegetables are fork tender.
