Gluten Free Blueberry Baked Oats
If you haven’t jumped on the baked oats trend yet, you’re missing out! These Gluten Free Blueberry Baked Oats take no time to whip up and taste like a giant Blueberry Muffin!
Did I mention these baked oats are made in the blender and they’re healthy and high in protein?! You really can’t go wrong with a giant healthy blueberry muffin that is ready in less than 30 minutes! And this blueberry muffin happens to be dairy free as well if you use almond, coconut, oat, soy, or other plant-based milk.
What ingredients you need to make gluten free blueberry baked oats:
- 1/2 cup + 1 tablespoon gluten free oats
- 1/2 tsp baking powder
- 1 serving vanilla protein powder (this is my favorite)
- 1 serving collagen peptides
- 1 tablespoon maple syrup
- 1 teaspoon vanilla extract
- 1/3 cup unsweetened almond milk (or milk of your choice)
- 1 large egg
- 1/4 cup blueberries (fresh or frozen)
How to make gluten free blender baked oats:
- Preheat oven to 350°F
- Add everything but the blueberries to a blender or food processor and blend until smooth
- Pour batter into a small greased baking dish (This is the one I use from Target)
- Stir in blueberries
- Bake at 350°F for 20-24 minutes, depending on your oven
- Allow to cool 5 minutes before digging in
This is a pretty hefty serving, so if you want to split it into two servings, use two of the smaller baking dishes.
Optional Add-ins:
If you aren’t a fan of blueberries or you want to try this base with different flavors, try stirring in some chocolate chips to make a giant chocolate chip muffins that’s healthy and high in protein.
Add an 1/8 teaspoon cinnamon to the batter and stir in some sliced bananas and chopped walnuts for a banana bread muffin.
Add some chopped up strawberries and top with dairy free whipped topping for a healthy take on strawberry shortcake.
Can I make these oats without using a blender or food processor?
Yes, you can make these baked oats without a blender or food processor. The texture will be slightly different because the oats won’t be blended, but if you stir all of the ingredients together in a bowl, they will bake up beautifully.
