Breakfast Burritos {gluten free, healthy}

Breakfast Burritos
Ingredients
- 2 large eggs
- 10 egg whites
- 1 pound turkey breakfast sausage
- 1/2 cup shredded sharp cheddar cheese
- 1/2 tsp sea salt
- 1/2 tsp black pepper
- 8 Siete almond flour tortillas
- spray cooking oil (avocado or olive)
Instructions
- Preheat oven to 350 degrees
- Heat large skillet medium-high heat and spray with cooking oil
- Add turkey sausage to skillet and cook until no longer pink, cooked through
- Line a plate with paper towels and drain sausage
- In a mixing bowl, combine two large eggs, 10 egg whites, salt, and pepper and mix together
- Place sausage back in skillet, stir in eggs, and cook until eggs are cooked through
- Add cheese to skillet and stir until melted and combine with eggs and sausage
- Fill 8 gluten free tortillas with mixture, fold, and bake at 350 degrees for 12-15 minutes
- Serve with salsa and sour cream
