Spinach and Egg Scramble {gluten free, healthy, low fat}
Spinach and Egg Scramble
Ingredients
- 1 large egg
- 3 large egg whites
- 1 handful baby spinach
- 1/2 cup grape tomatoes
- 2 tbsp crumbled feta cheese
- spray avocado oil
- 1/8 tsp black pepper
- 1/4 tsp sea salt
- 1/4 tsp dried basil
Instructions
- Separate 3 eggs whites and place in a small mixing bowl
- Add one whole egg to the egg whites and whisk together
- Stir in salt, pepper, and basil (set aside)
- Cut tomatoes in half lengthwise and set aside
- Heat a medium skillet to medium heat and spray with avocado oil
- Add spinach and tomatoes to skillet and saute until spinach is wilted
- Add egg mixture to skillet with spinach and tomatoes and cook until eggs are cooked through
- Top with 2 tbsp feta cheese and enjoy a tasty scramble with half the fat!
