French Onion Chicken Recipe (gluten free, low carb)
This French onion soup chicken recipe will instantly become a family favorite meal. Even my kiddo likes this one because it’s cheesy and delicious. Whether you’re low carb or just looking for a comforting meal with flavors that will remind you of French onion soup, this is an easy chicken recipe your whole family will love.
French onion soup lovers, this recipe is for you! Don’t get me wrong, this recipe doesn’t take like the classic soup, but it does boast some rich flavors, lots of protein, and it’s keto friendly. I like making this recipe with fresh ingredients, but you could easily use an instant onion soup mix to make this meal even quicker. I love taking shortcuts like that in my kitchen, but Lipton onion soup mix isn’t gluten free, and the other French onion soup mix packets I have found don’t have quite the same flavor, so I use onion powder and a shallot to get those same delicious flavors.
This French onion soup chicken recipe is adapted from a Real Home Chef meal I ordered a few years ago. Their meal used pork chops, but once I recreated it with chicken, I haven’t looked back! There are a few great things about this meal: one, it’s made with a few simple ingredients, two, it comes together in 15-20 minutes, and three, it’s just freaking delicious.
INGREDIENTS
chicken breasts: I like using thin chicken breasts for this recipe because they cook quickly and once you pile the cheese mixture on top, it isn’t too thick. If you can’t find thin boneless skinless chicken breasts at your grocery store, butterfly regular chicken breasts and pound them out until they’re about 1/4 inch thick
shredded cheese: The glorious melted cheese is what gives you those classic French onion soup flavors. My favorite cheese for this recipe is Monterey Jack, but gruyere cheese, mozzarella cheese, and Swiss cheese also work nicely. Just make sure you choose a melty cheese
onion powder: Any brand of granulated onion will do!
salt: I use kosher salt because I feel it tenderizes the chicken a little more than regular table salt
shallot: The star ingredient in this dish is the sweet caramelized onions! A sautéed shallot is what gives this French onion chicken recipe the classic flavors of French onion soup. If you don’t want to use a shallot, sweet onions or yellow onions are a good choice
cream cheese: Y’all, I add cream cheese to a lot of my recipes because it’s just so easy to work with, tastes amazing, and melts so beautifully. I use 1/3 less fat cream cheese, but regular works great too
cooking spray: I only use avocado or olive oil spray, but any neutral cooking spray will do. A pat of butter or tablespoon of avocado oil will also work in this easy recipe
