This Healthy Edible Cookie Dough Recipe for One is safe to eat raw, tastes like actual cookie dough, and is made with good for you ingredients! It’s gluten and dairy free, vegan, and oh so yummy!

How many times have you gotten ready to bake a batch of cookies and were tempted to eat the raw dough but then reminded yourself of the safety of raw flour and eggs? Well, now you can satisfy all of your cookie dough cravings without the risk of E. coli or salmonella!

It took me a while to get this small batch of edible cookie dough to taste like the real thing but I finally nailed it! When it comes to eating raw store-bought cookie dough, it’s just not worth the risk. Sweet Loren’s ready to bake cookies are delicious, made with heat-treated flour, and safe to eat raw, but making them from scratch with healthy ingredients is more fun!

Raw cookie dough is made with raw eggs and untreated flour, both of which are not safe to eat. Raw eggs may contain a bacteria called salmonella, which can make you very sick and can lead to dangerous complications, especially if you have a compromised immune system. 

Untreated flour harbors bacteria as well, making it unsafe to eat. 

This eggless edible cookie dough is made with almond flour. Almond flour is essentially just ground up almonds, and the almonds are not actually raw. Prior to being ground into almond meal, the almonds are heat treated to kill harmful bacteria, making it safe to eat raw. 

Almond meal and almond flour are interchangeable in most recipes. Almond flour is made from blanched almonds, which means the skins have been removed prior to being ground into flour, and almond meal is typically made from almonds that still have the red skin on. Either works well in this edible chocolate chip cookie dough recipe.

  • Coconut oil
  • Maple syrup
  • Coconut sugar
  • Vanilla extract
  • Pinch of salt
  • Chocolate chips

A few notes about the ingredients: 

Almond flour: Almond flour is my flour of choice for this healthy edible cookie dough recipe for a few reasons. One, almond flour is safe to eat raw. Two, almond flour has a mild flavor that is easily disguised by the other ingredients in the recipe. And three, the almond flour lends a nice texture to this cookie dough recipe.

If you only have coconut flour on hand, you can use it, but I would start with using half the amount called for and add the rest in 1 tablespoon at a time until you get the right consistency. You will likely need less coconut flour than you would for almond flour because it is more dense. Please keep in mind that coconut flour will add a coconut flavor to this cookie dough, so that’s why I recommend using almond flour.

Coconut oil: You can use refined or unrefined coconut oil for this Edible Cookie Dough Recipe. The difference between the two is that unrefined coconut oil is minimally processed and has a lower smoke point. Since we’re not baking the dough, unrefined coconut oil works great in this recipe, but it will add a slight coconut flavor. Refined coconut oil, on the other hand, does not have a coconut flavor because the coconut meat has been filtered and dried prior to being pressed into oil. If you don’t want a coconut flavor, opt for the refined coconut oil for this easy recipe.

If you feel that 3 tablespoons of oil is a bit much, you can substitute unsweetened almond milk, but add it a little bit at a time until you get the right consistency

Coconut sugar: This was the missing ingredient this healthy edible cookie dough for one recipe needed. After a few taste tests, everyone said the cookie dough was missing something. So I told them to keep in mind that it’s healthy. They said it’s good, but to taste like real cookie dough, it needed something else, like brown sugar. Brown sugar will definitely work in this recipe, but then I’d have to remove the claim that it’s healthy, so I went back to the drawing board. After a few days, it dawned on me that coconut sugar would be a great substitute for brown sugar in this recipe, so I made a batch and fed it to my hubby…he ate the whole batch! He couldn’t stop raving about how it tasted like real cookie dough and text his daughter to tell her she has to try it now! So please, don’t skip this ingredient!

Chocolate chips: Milk chocolate chips, semi-sweet chocolate chips, and dark chocolate chips all work well for this recipe. Make sure you’re using vegan chocolate chips if you need a vegan or dairy free recipe.

You don’t have to eat just chocolate chip cookie dough, you can change up the flavors of this delicious cookie dough using the base of this recipe and then instead of chocolate chips, add in other ingredients! Healthy cookie dough is the perfect late night treat and a good idea any time you’re craving a sweet treat!

White Chocolate Macadamia Nut: add 1 tablespoon white chocolate chips and 1 tablespoon macadamia nuts 

Coconut: add 2 tablespoons unsweetened coconut flakes

Birthday Cake: add in 2 tablespoons sprinkles

Peanut Butter: add 2 tablespoons peanut butter to the dough

Sugar: omit the chocolate chips and you have edible sugar cookie dough made without white sugar

Brownie Batter: add 1 tablespoon cocoa powder to the recipe

  1. Add coconut oil to microwave-safe bowl and heat for about 1 minute, until melted. Then measure out 3 tablespoons of melted oil.
  2. Add all ingredients, except the chocolate chips, to a small bowl and stir until everything is combined
  3. Next, stir in the chocolate chips
  4. Devour!

If you prefer to make cookie dough bites, make this recipe, pinch off about an inch of the dough at a time, and roll into little balls. Store leftovers in the fridge in an airtight container for up to 3 days.
