As a busy mom working two jobs, weeknight meals have to be quick and easy in my house, and these Healthy Turkey Meatloaf Muffins check both boxes. They are made with simple ingredients and are ready in 30 minutes.

The next time you feel like you have to choose between feeding your family fast food or feeding your family a healthy home-cooked dinner, choose these meatloaf muffins. They are made with healthy ingredients, and it takes right around 30 minutes from start to finish to make them. Cleanup is also a breeze because you’re only using two dishes to prep the whole meal!
When my picky toddler asks for more, I put that recipe on repeat, so these healthy turkey meatloaf muffins have become a staple in my house! I’ve even come up with a few lazy side dishes to pair with them for a healthy home cooked meal with minimal prep and cleanup!
Easy side dishes that pair well with these Turkey Meatloaf Muffins:
I am all about taking shortcuts in the kitchen in order to feed my family a healthy home cooked meal on weeknights. The following are my go-to sides for nights when I’m pressed for time but still need to feed my family!
Frozen vegetables:
Visit the frozen veggies aisle and stock your freezer with some easy side dishes to make weeknight meals go a lot quicker. A lot of the frozen veggies can be steamed right in the bag they come in, which makes cleanup a breeze! Some of my favorites are Birds Eye Steamfresh Vegetables and Green Giant Simply Steam. Some of the seasoned veggies contain allergens, so its advisable to check the ingredients list before purchasing if you need gluten and dairy free options.
Mashed Potatoes:
Meatloaf and mashed potatoes paired together takes me back to my childhood! My mom always made homemade mashed potatoes, and I have a great recipe for them too, but the convenience of Bob Evans Mashed Potatoes is what I usually opt for on busy nights. They taste homemade, they’re gluten free, and they cook in the microwave in the container they’re packaged in, so there are no extra dishes to clean!
Mashed Cauliflower:
You can buy frozen mashed cauliflower or make it fresh. Making it fresh is very simple. Just take a head of cauliflower and break off the florets (or buy a bag of cauliflower florets). Rinse the florets and put them in a large microwave safe bowl. Add ¼ cup water to the bowl and microwave on high for about 5-6 minutes until cauliflower is tender and easily pierced with a fork. Drain and add cauliflower florets to a food processor with 2 ounces cream cheese, 1 tablespoon butter, ¼ cup milk, and salt and pepper to taste. Blend until smooth and creamy!
Green Beans:

What ingredients you need to make these Gluten Free Turkey Meatloaf Muffins:
- Lean ground turkey
- Worcestershire sauce
- Dijon mustard
- Dried minced onion or minced shallot
- Salt & pepper
- BBQ sauce
A note about the BBQ sauce: if you’re on a low carb diet, check to make sure your bbq sauce is low carb as well.
How to make these Turkey Meatloaf Muffins:
- Preheat oven to 400°F
- Add everything but the bbq sauce to a large mixing bowl and mix together with your hands
- Separate the meat into 8 equal portions and place them in greased muffin tins
- Bake at 400° for 20 minutes
- Pull muffins out of oven and top each meatloaf muffin with ½ tablespoon bbq sauce
- Place back in oven and bake another 5 minutes
- Makes 8 2oz Turkey Meatloaf Muffins (4 servings)
