I think we can all agree that itโ€™s hard to resist Girl Scout Cookies! But for some of us, weโ€™re limited on flavors due to allergies and dietary restrictions. And for others, you want the flavors without all of the sugar. In comes these Samoa Energy Bites to save the day for everyone! With all of the flavors of Samoas but created with clean ingredients, these Samoa Energy Bites are a snack you wonโ€™t feel bad about eating! They are gluten free, dairy free, vegan, and soy free!

Traditional Samoas are made with sugar as the first ingredient, followed by vegetable oil, and the list goes on to include wheat, soy, and milk. So if you are gluten free, vegan, soy free, dairy free, or just trying to stay away from sugar, they are not the cookie for you. As someone who is now gluten free, I have been missing the flavors of a Samoa cookie. So I did what I always do when I miss an item that I loved prior to becoming gluten free, I turned to my kitchen and started creating! And since I figure others with dietary restrictions are missing these delicious little cookies too, I decided to make these Samoa Energy Bites gluten free, vegan, dairy free, and soy free! That way lots of people can enjoy them!

What ingredients you need to make Samoa Energy Bites:

  • Medjool Dates: Dates are naturally sweet, and theyโ€™re sticky and chewy which helps to hold these Samoa Energy Bites together like glue. You can buy them pitted or pit them yourself. 
  • Shredded Coconut: Youโ€™ll want to use unsweetened shredded coconut. You can toast it if youโ€™d like but itโ€™s not necessary. In my kitchen, weโ€™re all about shortcuts, so I do not toast my coconut. If you choose to, just preheat your oven to 400ยฐ, place the coconut on a baking sheet in an even layer, and bake it for about 5-8 minutes, until itโ€™s a light golden color. Watch it carefully around the 5 minute mark to prevent burning. 
  • Almond Butter: Almond butter will add texture to these bites and help to hold them together, but it can be o substituted with your favorite nut butter or sunflower butter.
  • Vanilla Extract
  • Salt
  • Mini Chocolate Chips: Enjoy Life brand is my favorite for both flavor and as a dairy free option. You can find them in most grocery stores.

How to make Samoa Energy Bites:

  1. Add dates, coconut, almond butter, vanilla, and salt to food processor. Process until a ball of โ€œdoughโ€ is formed
  2. Using a cookie scoop or your hands, pinch off about 1 tbsp of โ€œdoughโ€ and roll into a ball, repeat for remaining mixture (should make about 12 balls) *You may have to squeeze the ball to get it to stick together 
  3. Align balls on a baking sheet lined with parchment paper 
  4. Melt the chocolate chips in the microwave for 30 seconds, stir, and melt for another 30 seconds, continuing in 30 second intervals until chocolate has melted. Stir again and using a spoon, drizzle the melted chocolate over the balls 
  5. Pop the baking sheet in the fridge for about 30 minutes for chocolate to set and then enjoy! 
  6. They keep in the fridge for about a week and in the freezer for up to 3 months in an airtight container

What if you donโ€™t have a food processor?

If you donโ€™t have a food processor, you can use a high-powered blender or chopper.

How to store Samoa Energy Bites:

Store energy bites in an airtight container in the fridge for up to 1 week or in the freezer for up to 3 months. Place frozen bites in fridge overnight to thaw

Ingredients
  

  • 8 ounces pitted medjool dates about 20 dates
  • 1/2 cup shredded coconut
  • 1 tablespoon almond butter or your favorite nut/sun butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/3 cup mini chocolate chips melted

Instructions
