Healthy Tagalong Bites
After I posted my Samoa Energy Bites recipe, I received several requests for a healthy Tagalong, and here it is! These Healthy Tagalong Bites are amazing!!! They are made with simple, clean ingredients, and they pack all of the chocolate peanut buttery goodness you expect! They are gluten free, dairy free, vegan, and they only have 7.5g net carbs per serving, making them perfect for just about everyone to enjoy!
These Healthy Tagalong Bites have a smooth texture that almost seems to melt in your mouth. But with the hardened chocolate coating, you get that little crunch you desire from a chocolate peanut butter cup. If you want more of a โcookieโ crunch, you can add 2 tablespoons chopped nuts to the mix, or use a chunky peanut butter instead of smooth.
I canโt even think of any shortcuts for this Healthy Tagalong Bites recipe, because it is that easy to make! And with just 6 simple, clean ingredients, they are a snack you can feel good about sharing with your children. So hereโs to guilt-free indulgence!
If youโre using a natural peanut butter that is runny, you may need to increase almond flour to get the right consistency. Just add a teaspoon at a time until the texture is smooth and easy to roll into balls.
If you make this recipe and love it as much as I do, please let me know! And if you have any requests for recipes, Iโm happy to get creative for you!
What you need to make Healthy Tagalong Bites:
- Almond flour: I have tried making these bites with coconut flour, and it just didnโt work out. The consistency was crumbly and the taste of coconut was overpowering. Stick with almond flour for this oneโฆtrust me!
- Creamy peanut butter: or crunchy peanut butter if you want a crunch
- Maple syrup
- Vanilla extract
- Salt
- Mini chocolate chips: Enjoy Life mini chocolate chips are my favorite brand. They are gluten free, dairy free, vegan, and soy free, and theyโre made with just 3 simple ingredients
How to make Healthy Tagalong Bites:
- Add almond flour, peanut butter, maple syrup, vanilla, and salt to a medium mixing bowl and stir to combine. Using a cookie scoop or your hands, pinch off about 1 inch of dough and roll into a ball. Place ball on a dish lined with parchment paper. Continue making balls until all dough has been used (makes about 14-16 balls)
- Place balls in fridge to chill while you melt the chocolate chips. Melt chocolate chips in a microwave safe dish for 1 minute. Stir and put back in microwave for another minute, stir again.
- Dip balls into chocolate. You can coat half of the ball or the whole ball, itโs up to you!
- Place back on parchment paper and put back in fridge for chocolate to set up, about 20 minutes
- Eat up!
- Store leftovers in an airtight container in the fridge for up to 1 week or freezer for up to 3 months
