Peanut Butter Energy Balls {Gluten Free, Vegan}
Ingredients:
- 1 cup creamy peanut butter
- ½ cup gluten free oats
- 2 tablespoon ground flaxseed
- 2 tablespoon maple syrup
- 1 teaspoon vanilla extract
- ½ teaspoon coarse sea salt
- optional—2 tablespoon mini chocolate chips (fold in after all other ingredients are combined)
Directions:
- Add oats and ground flaxseed to a high powered blender or food processor and blend until combined.
- Place peanut butter, maple syrup, vanilla, sea salt, and chocolate chips in a bowl and add the ground oats and flaxseed.
- Stir until combined.
- Scoop out 1 tablespoon at a time and roll into balls.
- Store in an airtight container in refrigerator or freezer.
