The Best Wedge Salad {gluten free, keto}

I remember the first time I had a wedge salad. I was in high school and my boyfriend’s parents took us to Ruth’s Chris Steakhouse for dinner. I was so confused by the wedge salad because it was literally just a large chunk of Iceberg lettuce with ranch dressing drizzled over the top of it. But the flavors were amazing, and it blew it my mind! So when I went to a restaurant recently and saw a wedge salad on the menu, I had to order it. This one was covered in ranch dressing, hardboiled eggs, and crumbled bacon, and boy was it yummy! In fact, it was so delicious that I recreated it the next day, only I added shredded cheddar and my homemade ranch dressing, and it was the best salad I’ve ever eaten!

To make this salad is super easy. You just need some bacon bits (I used 4 slices of crispy cooked bacon), some chopped up hardboiled eggs, shredded cheddar cheese, ranch dressing, and of course a head of Iceberg lettuce. I highly recommend using my ranch dressing recipe…my hubby says it’s the only ranch he ever wants to use now!

So to assemble this salad, you’re going to rinse the head of lettuce under cold water and then cut it in half, and then cut each half in half. Place each wedge on a rimmed plate and then top with ranch dressing, bacon bits, pieces of hardboiled eggs, and some cheddar cheese. It’s such a simple salad, but it will wow your family and guests!

Ingredients:

  • 1 head iceberg lettuce
  • 4 hard-boiled eggs, chopped into small pieces
  • 4 slices cooked bacon, chopped into bits
  • 1 cup shredded cheddar cheese
  • 1 cup ranch dressing

Directions:

  • Rinse head of lettuce with cold water, cut in half, and then cut each half in half. Place each wedge on a rimmed plate.
  • Make hardboiled eggs: add eggs to a saucepan and cover with water. Place on stove and turn heat to high, once the water begins to boil, turn off the heat, put lid on pan, and set timer for 15 minutes. After 15 minutes, add cooked eggs to a bowl of ice water for 5 minutes. Then peel and cut into pieces and pour over top of lettuce wedge.
  • Cut 4 slices of cooked bacon into small bits, or use store-bought bacon bits, and pour over lettuce wedge.
  • Sprinkle cheddar cheese over lettuce wedge.
  • Drizzle ranch dressing over salad and serve!
