My family is obsessed with Kind Dark Chocolate Granola, but it gets expensive! So I decided to whip up a batch of chocolate granola using ingredients I already had on hand, and everyone in my house likes it so much, we'll never go back to the store-bought stuff! It's cheaper to make it at home, and it tastes just as yummy...plus, it's easy to make!
Here's what you'll need:
- 2 cups gluten free rolled oats
- ¼ cup slivered almonds
- ¼ cup chopped pecans
- ¼ cup unsweetened shredded coconut
- ¼ cup coconut sugar
- 2 tablespoon cocoa powder
- 2 tablespoon flaxseed meal
- pinch cinnamon
- pinch salt
- 1 teaspoon vanilla extract
- ⅓ cup melted coconut oil (3 tablespoon solid)
- ¼ cup maple syrup
- ¼ cup mini chocolate chips
Directions:
Preheat oven to 325 degrees and line a baking sheet with parchment paper
Add all ingredients to a large mixing bowl and stir to combine
Pour out onto the lined baking sheet and press into a thin layer
Bake at 325 degrees for 20-25
Allow to cool for 1 hour before breaking apart into clusters
Store in an airtight container on counter or in fridge for up to two weeks
