Chocolate Peanut Butter Granola {healthy, gluten free, vegan}
If you love no-bake cookies, you will love this granola! The flavors are on point, but this granola is full of healthy ingredients, so you don’t have to feel guilty about eating it!
Ingredients:
- 2 cups gluten free rolled oats
- 1/4 cup slivered almonds
- 1/4 cup coconut sugar
- 2 tablespoons cocoa powder
- pinch of salt
- 1 teaspoon vanilla extract
- 2 tablespoons flaxseed meal
- 2 tablespoons chia seeds
- 2 tablespoons unsweetened shredded coconut
- 1/2 cup melted coconut oil (1/4 cup solid)
- 1/4 cup + 1 tablespoon maple syrup
- 1/2 cup creamy peanut butter
Directions:
Preheat oven to 300°F
In a microwave safe dish, combine melted coconut oil, peanut butter, vanilla extract, and maple syrup and stir to combine
Add oats, almonds, coconut sugar, cocoa powder, salt, flaxseed meal, chia seeds, and shredded coconut to a large mixing bowl
Pour coconut oil mixture over dry ingredients and stir to combine
Spread mixture out onto baking sheet lined with parchment paper and press into a thin layer
Bake at 300° for 25 minutes
Allow to cool for 1 hour before breaking apart
Granola will still be soft in the middle to give the texture of no bake cookies!
Store in an airtight container in fridge for up to 1 week (if it lasts that long!)
Optional Add-Ins:
Chopped peanuts make a great add-in for this granola! Just add 1/4 cup chopped peanuts and stir into the batter before baking.
