This easy recipe for slow cooker ground beef stroganoff is a hearty meal with so much flavor you won’t believe how easy it is to make. I mean, who doesn’t love crock pot meals that practically cook themselves while you go about your day with a lot less dishes to wash? And then you just serve it up over a bed of tender noodles. A bed of egg noodles is traditional for a classic beef stroganoff recipe, and with Jovial foods, you can have gluten free egg noodles too!

This is one of our go to recipes in my house for busy nights when we want a delicious meal but we don’t have the time to stand in the kitchen for hours cooking and cleaning. If you meal prep, the meat mixture freezes well in a large freezer bag so you can lay it flat and not take up much space. Just allow the meat to cool to room temperature before placing it in the bag. Side note: I like to meal prep for the week on Sunday evenings. It helps me keep myself organized and then I have an easy weeknight meal whenever I want it. For this creamy beef stroganoff, I cook the meat and onions ahead of time and freeze or refrigerate the mixture (depending on what night I have this meal planned for dinner), and then I just place the frozen meat in the crockpot with the creamy mushroom sauce and let it cook all day while I work and run errands. It’s so easy even my hubby can make this meal!

Ground beef: I like using either 92% or 96% lean ground beef for this recipe, but you can use a fattier beef if you want. Just make sure to drain the grease if using a fatty beef. If doubling the recipe, use a combination of ground beef and ground turkey for extra flavor.

Cream of mushroom soup: I use Pacific brand cream of mushroom soup because it’s gluten free, and Great Value brand at Walmart has a gluten free version too (I’ve never tried it but I’ve heard about it).

Beef broth: I use beef bone broth for extra protein, but any beef broth or beef stock is fine.

Onion: I used a sweet onion for a mild flavor, but white onion, yellow onion, or even a shallot will taste great.

Worcestershire sauce: Don’t omit this ingredient!!! It’s what gives you that traditional beef stroganoff flavor.

Cream cheese: I use 1/3 less fat, but full fat or even fat free is fine too. If you’re keeping it dairy free, opt for a dairy free cream cheese.

Salt: Everyone has a different saltiness preference, and the amount of salt you need will also depend on whether your beef broth is seasoned or low sodium. So you’ll want to salt it to taste. My family likes it salty so I used about 1/2-1 teaspoon for this recipe with low sodium beef bone broth.

Gluten free pasta: I have a great gluten free pasta guide you can check out. Egg noodles are traditional, but your favorite pasta is what you should use.

Optional add-ins:

Fresh mushrooms: add some thinly sliced fresh baby bellas or cremini mushrooms

Sour cream: about 1/4 cup will give you an extra creamy sauce. Greek yogurt is another great option to add more protein

Fresh parsley: sprinkle some on top before serving

How to make this easy beef stroganoff recipe:

In a large skillet over medium-heat, brown ground beef with diced onions and add Worcestershire sauce. Once beef is cooked through, add it to your slow cooker.

In a small mixing bowl, whisk together beef broth and a can of cream of mushroom soup and then pour the mixture over top of the ground beef and onions in the slow cooker.

Cook on low for 3-4 hours. Stir in cream cheese about 15-30 minutes before serving, and serve over gluten free pasta (cook pasta according to package directions).

Store leftovers in an airtight container in the fridge for up to 3-4 days.

Ingredients
  

  • 1 pound 96% lean ground beef
  • 1 can cream of mushroom soup
  • 1/2 cup beef bone broth
  • 1/4 cup diced onion
