These Gluten Free Little Bites Brownies are an AMAZING treat I feel good about feeding my kids. They are gluten free, dairy free, made with healthy ingredients, and taste just like real brownies!
Gluten Free Little Bites Brownies
My boys love Entenmann’s Little Bites Brownie muffins, but I don’t like the ingredients they’re made with. So I set out on a mission to create a healthy alternative I feel good about feeding them. I even let them help me make these Gluten Free Little Bites Brownies so they know what ingredients they are putting into their little bodies.
These gluten free brownie muffins are a treat my whole family enjoys, not just the kiddos. My hubby and I love them too because they taste just like actual brownies! Even the texture is the same!
What ingredients you need to make gluten free brownie muffins:
- Almond flour
- Coconut sugar
- Cocoa powder
- Baking powder
- Salt
- Melted coconut oil
- Maple syrup
- Unsweetened almond milk
- Eggs
- Mini chocolate chips, optional (Enjoy Life brand are my favorite)
Notes about the ingredients
I use almond flour for these brownie bites because it gives a more realistic brownie texture. If you choose to use coconut flour or oat flour, you may need to play around with the ingredients a little to get the texture just right.
Refined coconut oil does not have a coconut flavor, whereas virgin coconut oil does. I have used both, and the flavor isn’t much different.
If you want to keep this recipe vegan or egg free, use 1/2 cup applesauce or a flax egg in place of the eggs.
The chocolate chips are optional, but they add an extra chocolatey gooeyness to this recipe that make the brownies extra decadent!
How to make gluten free brownie bites:
- Preheat oven to 350°F
- Add all ingredients to a large mixing bowl and stir until combined. This recipe is easy to mix by hand, so you don’t need to use an electric mixer
- Add about 1 tablespoon of batter to greased mini muffin tins
- Bake at 350° for about 18-22 minutes (until a toothpick stuck into the center comes out clean)
- Allow to cool for 5 minutes before removing from muffin tins
- Store in airtight container on counter or in fridge for up to 5 days
Storage
Allow gluten free brownie bites muffins to cool to room temperature before placing in airtight container. Store on counter or in fridge for up to 5 days.
These brownie muffins can be frozen in a freezer safe container for up to 3 months. To thaw, place container in fridge overnight, and use within 5 days of thawing.
