Gluten Free Pineapple Lush Cake

This is the technical name for angel food cake topped with cool whip and crushed pineapple frosting! Fresh berries are often added to give this summer cake a patriotic flair! Whatever you call it, this Gluten Free Pineapple Lush Cake is the dessert for all of your summer cookouts!
If you can eat gluten, making this cake is the easiest thing in the world. All you need is a store-bought angel food cake, cool whip, crushed pineapple, vanilla pudding mix (optional), and some fresh berries. But when you can’t eat gluten, you have to make the angel food cake yourself.
You have two options for gluten free angel food cake. One, you can use this recipe and make it from scratch (it’s easy to make). Or two, you can buy Kinnikinnick gluten free angel food cake mix and bake it! After making both, I prefer the from scratch version because it’s difficult to locate the boxed version.
What ingredients you need to make Gluten Free Pineapple Lush Cake:
- Gluten free angel food cake (see above for options)
- 16 ounce container Cool Whip
- 20 ounce can crushed pineapple
- 3.4 ounce box vanilla pudding mix, optional
- Fresh berries
How to make Gluten Free Pineapple Lush Cake:
- Slice angel food cake in half horizontally so you have two equal halves (top and bottom)
- Mix together thawed cool whip, vanilla pudding mix (just the powder), and crushed pineapple
- Spread frosting on the bottom half of the cake, then place the top half of the cake on and frost the top and sides
- Top with fresh berries and serve!

Store leftovers in an airtight container in the fridge for up to 3 days.
