    Gluten Free Low Carb Caprese Pizza

    If you’ve cut carbs, you may find yourself craving pizza. Well, I’ve got you covered with this Gluten Free Low Carb Caprese Pizza, featuring my already famous Gluten Free Low Carb Pizza Crust! 

    Seriously, my Low Carb Pizza Crust is one of my most viewed recipes! I’ve been making it and sharing it with others for years, and it never disappoints. So one night, I was craving caprese salad AND pizza, and I decided to marry the two together, and OMG you guys, it is a match made in heaven! 

    If you’re looking for a dairy free recipe, you should probably back out of this recipe and check out my gluten free pizza dough recipe. But if you’re looking for ooey gooey cheesy goodness, then keep reading because this is the recipe for you!

    The crust for this Low Carb Caprese Pizza is made with cheese and almond flour, and the toppings are classic caprese salad, including fresh mozzarella, fresh basil, olive oil, and balsamic vinegar. The pizza sauce stands in for the tomatoes. All of those delicious Caprese Salad flavors on top of a cheesy pizza crust are almost too good to be true! 

    Whether you’re living a low carb lifestyle, carb-cycling, or you just love a good pizza, this is definitely a recipe you need to try!

    What ingredients you need to make Gluten Free Low Carb Caprese Pizza:

    • Shredded mozzarella cheese
    • Cream cheese
    • Almond flour
    • Garlic salt
    • Pizza sauce
    • Fresh mozzarella cheese
    • Fresh basil
    • Olive oil
    • Balsamic vinegar

    How to make Low Carb Caprese Pizza:

    1. Preheat oven to 425°F
    2. Start by making your crust. Add 2 cups shredded mozzarella cheese and ¼ cup cream cheese to a large microwave safe mixing bowl. Microwave for 1 minute, stir, put back in microwave for another minute, then stir again
    3. Add almond flour and garlic salt to melted cheese and mix with a fork or your hands to combine 
    4. Spread the dough out on parchment paper and form into a large rectangle about ¼ inch thick
    5. Bake crust for 4 minutes at 425°
    6. Remove from the oven and add pizza sauce, fresh mozzarella, and a drizzle of olive oil
    7. Bake again until cheese has melted and the edges are golden brown (about 4-6 minutes)
    8. Top with fresh basil and a drizzle of balsamic vinegar
    9. Makes 4 servings

    • 2 cups shredded mozzarella cheese
    • ¼ cup cream cheese I use ⅓ less fat
    • ¾ cup almond flour
    • 1 teaspoon garlic salt
    • 4 ounces fresh mozzarella

    • ½ cup loosely packed fresh basil
    • 1 tablespoon olive oil
    • 1 tablespoon balsamic vinegar
