Gluten Free Skinny Lasagna Roll Ups

When you’re craving all of the flavors of lasagna but want something a little lighter, give these Gluten Free Skinny Lasagna Roll Ups a try! You can make them with regular or gluten free lasagna noodles, and they’re sure to be a big hit with your whole family! I’ve even included a dairy free option! 

These Gluten Free Skinny Lasagna Roll Ups have all the flavors of traditional lasagna but without all of the mozzarella cheese. I know it sounds crazy making lasagna without mozzarella, but these Gluten Free Skinny Lasagna Roll-ups are sure to become one of your favorite weeknight meals! And you can make them with regular or gluten free lasagna noodles! 

I remember the first time I made them for my extended family, and they couldn’t believe I didn’t put meat in them. They loved them even without meat, but I started adding ground beef, and now everyone loves them even more! To make these Gluten Free Skinny Lasagna Roll-ups lighter, you’ll want to use a lean meat. 96% lean ground beef, lean ground turkey, or even ground chicken work great in this recipe. 

If you want to make the lasagna roll ups dairy free, you can use a dairy free ricotta cheese or even a dairy free cream cheese and omit the parmesan altogether. The consistency will be a little different, but the flavors will still be delicious!

As for the noodles, I started making these roll ups long before I was forced to cut gluten from my diet. And I have to say that regular noodles work a lot better than gluten free noodles for this recipe. Gluten free noodles tend to break a lot more when they’re boiled, so I always make sure to have extras. That’s my biggest tip for this recipe whether you use regular or gluten free noodles: make extra noodles because some will inevitably break. These are some of my favorite gluten free lasagna noodles for roll-ups: Jovial and Tinkyada. Whatever noodles you use, make sure you boil them according to package directions and then let them cool for a few minutes before trying to handle them. 

Heart of Palm lasagna noodles are an excellent gluten free option for this recipe! They are much more pliable and you can use them without having to boil them first.

What ingredients you need to make Gluten Free Skinny Lasagna Roll Ups:

  • Lasagna noodles, gluten free
  • Lean ground beef
  • Part-skim ricotta cheese
  • Grated parmesan cheese
  • Dried parsley
  • Salt
  • Black pepper
  • Marinara

How to make Gluten Free Skinny Lasagna Roll Ups:

  1. Preheat oven to 375°F
  2. Boil lasagna noodles according to package directions, drain, and allow to cool for about 5 minutes. Make extra noodles because some will inevitably break
  3. Brown ground beef in a medium skillet over medium high heat until cooked through 
  4. In a large mixing bowl, add ricotta, parmesan, parsley, salt, pepper, and cooked ground beef. Stir to combine
  5. Add 1 cup marinara to a 9×13 baking dish and spread to coat the bottom 
  6. Scoop 1/3 cup of mixture and spread onto lasagna noodle. Roll the noodle up and place it in the baking dish
  7. Continue for the rest of the mixture and noodles. It will make about 8-10 roll ups
  8. Pour remaining 2 cups of marinara over roll ups, cover dish with foil, and bake at 375° for 40 minutes
  9. Remove foil and bake another 3-5 minutes
  10. Sprinkle with parsley and parmesan if you’d like for serving!

Ingredients
  

  • 10 cooked lasagna noodles gluten free
  • 1 pound lean ground beef

  • 3 cups Rao's marinara, divided or your favorite marinara

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in microwave safe dish.
