    Caprese Chicken with White Balsamic Glaze

    Caprese Chicken with White Balsamic Glaze

    Ingredients
      

    • 6 thin chicken breasts
    • 6 slices fresh mozzarella cheese
    • 1 tablespoon italian seasoning
    • ½ tablespoon seasoned salt
    • 1 cup grape tomatoes, cut up
    • spray cooking oil
    • salt
    • pepper
    • basil leaves

    White Balsamic Glaze

    • ½ cup white balsamic vinegar
    • 1 tablespoon honey

    Instructions
     

    Make the balsamic glaze

    • Add vinegar and honey to a small saucepan and heat to medium high, stir occasionally
    • When the vinegar mixture starts to boil, reduce heat to low
    • Stir often until mixture thickens and coats the back of the spoon
    • Remove saucepan from burner and set aside

    For the chicken

    • Heat a grill or skillet to medium-high heat and spray with cooking oil
    • Mix italian seasoning and seasoned salt together and season both sides of chicken breasts
    • Grill or sautee chicken until done, about 5-7 minutes per side
    • Turn grill or skillet to low heat and place one slice of fresh mozzarella on each chicken breast allowing it to melt
    • In separate pan, saute cut tomatoes on medium heat for about 1 minute and season with salt and pepper
    • Transfer chicken to serving platter and top with tomatoes, basil, and drizzle of balsamic glaze

    Notes

    Notes: If you don't want to take the time to cut up and sauté tomatoes, a spoonful of pico de gallo will work in a pinch and add some heat to the dish!
