Easy Slow Cooker Pulled Pork {gluten free, low carb}

Pulled pork is one of the easiest recipes you can make in the slow cooker, and it can be used in a variety of ways: pulled pork sandwiches, pulled pork tacos, pulled pork burrito bowls, pulled pork and eggs, the list goes on!

You’ll need to start with a 2-3 pound pork shoulder. Sometimes it’s called pork butt, and it doesn’t matter if it’s boneless or bone-in. Next you’ll want to trim the thick fat off of it using a sharp knife. Then you’ll want to give it a rub down with some spices. Mix the spices together and then rub on all sides of the pork shoulder.

Spice Rub:

  • 1/3 cup packed brown sugar
  • 1 tablespoon salt
  • 2 teaspoons black pepper
  • 1 tablespoon smoked paprika
  • 1 tablespoon garlic powder

All that’s left is to add 1 cup water the bottom of your slow cooker and place the pork shoulder in. Cook on LOW for 8-10 hours. After it has cooked through, the meat will literally fall off of the bones if your pork shoulder isn’t boneless. Carefully lift the meat out of the crockpot and place it on a baking sheet or large cutting board. Using two forks, shred the meat and discard the bones. Discard the liquid in the crockpot and spray the inside with olive or avocado oil spray. Add the shredded meat back in cook on HIGH for 30 minutes to 1 hour.

Now you can use the pulled pork for a variety of dishes! My favorite way to eat it is on a Schaer Gluten Free Ciabatta Roll (cut in half), and topped with barbecue sauce and coleslaw!

This pulled pork will keep in the fridge for up to three days in an airtight container. Or you can freeze the leftovers for up to two months.

Ingredients
  

  • 2-3 pound pork shoulder
  • 1/3 cup packed brown sugar
  • 2 tablespoons salt
  • 2 teaspoons black pepper

  • 1 cup water
  • olive or avocado oil spray

Instructions
 

  • Carefully trim the fat off your pork shoulder and discard it
  • Mix together brown sugar, salt, pepper, paprika, and garlic powder and rub on all sides of pork shoulder
  • Add 1 cup water to slow cooker
  • Place pork shoulder into slow cooker and set to LOW for 8-10 hours
  • After pork has cooked, remove the meat from the slow cooker and place it on a baking sheet or large cutting board (it will fall apart easily)
  • Using two forks, shred the pork and discard the bones
  • Discard the liquid in the crockpot and spray the inside with olive or avocado oil spray
  • Place the shredded meat back into the crockpot and cook on HIGH for 30 minutes to 1 hour
  • Serve with your favorite barbecue sauce!

Notes:
  • This tastes delicious with Copycat KFC Coleslaw
  • You can cook this on HIGH in the slow cooker for 6 hours, but the meat won’t be as tender
  • Store leftovers in the fridge for up to three days
  • Freeze leftovers for up to two months
