Coleslaw needs to be creamy, vinegary (that's totally a word, by the way), and slightly sweet, am I right?! KFC makes the perfect coleslaw, but there isn't one anywhere near where I live, so I had to come up with a recipe that is equally delicious that I could make at home. And this recipe absolutely nails it! Like seriously, this is the BEST coleslaw I have ever eaten, and now I can whip some up any time I have a craving...and so can YOU!
Copycat KFC Coleslaw
This Coleslaw tastes like KFC, but better!
Ingredients
- 14 ounce bag of coleslaw mix or 4 cups shredded cabbage and 1 large carrot, shredded
- ½ cup mayo
- ½ cup buttermilk whole, not low-fat
- ¼ cup organic granulated cane sugar
- 2 tablespoons white wine vinegar or apple cider vinegar
- 2 tablespoons creamy horseradish
- 1 tablespoon lemon juice or juice from half a lemon
- 1 teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Add mayo, buttermilk, sugar, vinegar, horseradish, lemon juice, salt, and pepper to a large mixing bowl, and stir to combine
- Add slaw mix or shredded cabbage and carrot, and stir to combine
- Cover with plastic wrap and refrigerate for at least two hours before serving
- Stir before serving
