Gluten Free Pizza Dough

I saw another food blogger post about grilled pizza crust, and I immediately knew I needed to try it! I ran to the grocery store and bought a Bob’s Red Mill Gluten Free Pizza Crust Mix so I could make it and put it on the grill. It was a complete flop! I was devastated! Fortunately, I had all of the ingredients I needed to make my Low Carb Pizza Crust so we could still have pizza that night. I wasn’t brave enough to try it on the grill though because I had a very hangry toddler waiting for his pizza!
But I was determined to try again!
Ingredients you need to make gluten free pizza dough:
- 2 cups gluten free all purpose flour plus more for dusting (Cup4Cup is my favorite)
- 1 packet rapid rise yeast
- 1 cup warm water (heat in microwave for 1 minute)
- 1 tablespoon honey
- 1/2 teaspoon baking powder
- 1 tablespoon garlic salt
- 4 tablespoons extra virgin olive oil, divided
- 1 teaspoon apple cider vinegar
What gluten free flour to use for gluten free pizza dough:
All gluten free flours are not created equally, especially when it comes to making this gluten free pizza dough. King Arthur Gluten Free Flour, and Cup 4 Cup Gluten Free Flour are my favorites for making this pizza dough.
Bob’s Red Mill Gluten Free Pizza Crust mix is great for this pizza as well. Just ignore the instructions and ingredients on the back because it doesn’t work, and use the crust mix as flour following the instructions and ingredients listed in this recipe. Bob’s Red Milll 1 to 1 Baking Flour works in this recipe, but the All Purpose Flour does not because it doesn’t contain xanthan gum.
How to make gluten free pizza dough on the grill:
Preheat your oven to 400°F and your grill to 350°F
Warm 1 cup water in microwave safe dish for 1 minute
Add 1 tablespoon honey to warm water and stir
Add yeast packet that came with the crust mix to the honey and water, stir, and cover with a clean dish towel for 5 minutes
After 5 minutes, yeast should appear “foamy”

In the bowl of your stand mixer, add 2 cups Gluten Free flour (save the rest for dusting), 1/2 teaspoon baking powder, 1 tablespoon garlic salt, 2 tablespoons olive oil, 1 teaspoon apple cider vinegar, and foamy yeast mixture.
Turn mixer to low and mix until a dough has formed (depending on the type of flour you use, it may be sticky and wet)

Lay a piece of parchment paper (about 12×16 inches) on your counter and dust with gluten free flour
Turn the dough ball out onto the floured parchment paper
Dust the dough ball with more flour and knead until it is no longer sticky

Roll the ball out into a large rectangle (about 10×14 inches)

Brush the top with olive oil and place the dough in the oven for 5 minutes (this makes the dough firm enough to transfer to the grill without it falling apart)

Transfer to the grill, olive oil side down.
Turn heat to low, close lid, and cook for about 5 minutes, until bottom of crust is golden brown
Remove crust from grill and flip it over so browned side is on top, then add your favorite toppings


Place back on grill and cook on low heat with lid closed for another 5 minutes, until cheese has melted and bottom is golden brown
Carefully remove pizza from grill and dig in!
My toddler asks for grilled pizza every day now! Some of our favorite toppings are “cheeseburger” using lean ground beef, onions, and cheddar cheese and BBQ chicken pizza with sautéed onions.
When my best friends visited, I made this pizza for them, and they LOVED it! So does my picky bonus kid! So get out there and make this gluten free pizza dough!
How to cook gluten free pizza dough in the oven:
Brush the top of the rolled out dough with olive oil and bake at 400°F for about 5-8 minutes, until bottom is golden brown
Remove from oven and flip the gluten free pizza crust over so the cooked side is on top
Add your favorite toppings and place back in the oven to bake for another 5-8 minutes until bottom is golden brown and the cheese has melted

- Grill, Stand mixer
Ingredients

- ½ teaspoon baking powder
- 1 tablespoon garlic salt
- 4 tablespoons extra virgin olive oil, divided 2 tablespoons for dough, 2 tablespoons for brushing
- 1 teaspoon apple cider vinegar
Instructions
- Preheat your oven to 400°F and your grill to 350°F (see instructions above for baking in the oven)

- Add yeast packet to the honey and water, stir, and cover with a clean dish towel for 5 minutes

- Turn mixer to low and mix until a dough ball has formed

- Bake at 400° for 5 minutes and then flip it over and brush the top of the pizza crust with 2 tablespoons extra virgin olive oil
- Transfer dough to the grill, olive oil side down
- Turn heat to low, close lid, and cook for about 5 minutes, until bottom of crust is golden brown
- Remove crust from grill, flip it over so the browned side is up, and add your favorite toppings
- Place back on grill for 5 minutes, until cheese has melted and bottom is golden brown
- Carefully remove pizza from grill and dig in!
