Healthy Potato Salad {gluten free}

Healthy Potato Salad
Potato salad is one of those side dishes that can always be found at a BBQ or potluck. It can be made several different ways, and each family seems to have their own special recipe. But sometimes, what gets thrown in the bowl with the potatoes is based on items you have on hand. That was the case for this particular potato salad, and it turned out so tasty that I have to share it with the world!
Ingredients
- 1 pound yukon gold or red potatoes
- 1/2 cup whole milk plain yogurt
- 1/4 cup mayonnaise
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
- 1/4 tsp dried dill
- 1/4 cup diced shallot
- 1/4 cup diced dill pickles
Instructions
- Boil potatoes with skins on until tender when pierced with a fork
- Drain potatoes and let cool for 10 minutes
- While potatoes are cooling, add all other ingredients to a large mixing bowl and stir to combine
- Cut potatoes into 1/4 inch cubes and add to the mixing bowl
- Gently fold potatoes into seasoning mixture until combined
- Refrigerate leftovers for up to 3 days in an air tight container
