Smoothies are my favorite way to fill in nutrition gaps. If I need more carbs, fats, and proteins, a smoothie is always my first line of defense. You can literally throw any ingredients you want into a blender and call it a smoothie! When I make smoothies for the kiddos, I leave out the protein powder, but itโs a great way to sneak in veggies without them noticing! Cauliflower, kale, spinach, and avocado are my favorite veggies to add to smoothies because they are so easily disguised.
So why the cauliflower in this recipe? Well, two reasons: one, it adds nutrients and antioxidants, and two, it adds a creaminess when blended with the coconut milk that gives this Pina Colada Smoothie a silky texture. You can use cauliflower florets or cauliflower rice. I usually use riced cauliflower because itโs easy to keep a bag of it in my freezer for ease and convenience.
Pina Colada Mocktails and Cocktails
I want to point out that this coconut pineapple smoothie recipe would make a great Pina Colada mocktail if you omit the peptides and cauliflower and add 1/3 cup ice. The pre-made pina colada mixes you find in stores are often loaded with sugar, preservatives, and artificial ingredients, so this Pina Colada Smoothie base would be a much healthier alternative. You could even add a splash of rum if thatโs your thing and have a healthier cocktail!
Add coconut sugar to the rim of your glass for a fun mocktail or cocktail. To do this, dip the rim of the glass in water and then in coconut sugar. Then fill the glass with the pina colada mix! Garnish with a slice of pineapple and some unsweetened coconut flakes.

Pina Colada Smoothie Recipe Ingredient Swaps:
Lite coconut milk in a can is extra creamy without all of the fat of regular coconut milk, but you can use regular coconut milk if you need more healthy fats in your diet. You could also use coconut milk that comes in a carton. They are usually cheaper and itโs easier to store whatโs left over. If youโre using canned coconut milk, itโs important to store any leftovers in an airtight container (not in the can) in the fridge (use within 3 days).
Fresh pineapple can be used in this Pina Colada Smoothie Recipe. Just keep in mind that it wonโt be as cold if you use fresh ingredients versus frozen, but adding 1/3 cup ice to the blender will help!
As with the pineapple, you can use fresh cauliflower rice or cauliflower florets in this recipe. Again, add 1/3 cup ice cubes to the blender if you want your Pina Colada Smoothie to be ice cold.
