This is perhaps the simplest chicken salad recipe you will ever come across, but it is delicious and a must-try for a low carb lifestyle!
You can use frozen diced chicken breasts, shredded rotisserie chicken, or even canned chicken for this recipe. I have used all 3 and they are all delicious!
What you need:
- 1.37 pound bag of frozen diced chicken breasts (I used Tyson)
- ¾ cup mayonnaise (I used Duke's)
- ½ cup chopped pickles (I used Claussen)
- salt & pepper to taste
Directions:
Place diced chicken in a large microwave safe bowl and heat for 3 minutes
Stir and heat for another 3 minutes
Allow to cool for about 5 minutes
Chop chicken into smaller pieces, then stir in mayo and pickles
Season with salt and pepper to taste
