3 Ingredient Chicken Salad

This is perhaps the simplest chicken salad recipe you will ever come across, but it is delicious and a must-try for a low carb lifestyle!

You can use frozen diced chicken breasts, shredded rotisserie chicken, or even canned chicken for this recipe. I have used all 3 and they are all delicious!

What you need:

  • 1.37 pound bag of frozen diced chicken breasts (I used Tyson)
  • 3/4 cup mayonnaise (I used Duke’s)
  • 1/2 cup chopped pickles (I used Claussen)
  • salt & pepper to taste

Directions:

Place diced chicken in a large microwave safe bowl and heat for 3 minutes

Stir and heat for another 3 minutes

Allow to cool for about 5 minutes

Chop chicken into smaller pieces, then stir in mayo and pickles

Season with salt and pepper to taste

  • Stir and heat for another 3 minutes
  • Allow to cool for about 5 minutes
  • Chop chicken into smaller pieces, then stir in mayo and pickles
  • Season with salt and pepper to taste
  • It's that simple!
  • Store leftovers in an airtight container in the fridge for up to 3 days
