    Gluten Free Broccoli Cheese Casserole

    I’ll never forget the first time I had broccoli cheese casserole because it was a magical moment. The melding of the broccoli, cheese, and buttery crackers sent my tastebuds into a frenzy! From that point on, it became my favorite holiday dish! And since I had to cut gluten from my diet, I had to figure out a way to make a delicious Gluten Free Broccoli Cheese Casserole. So here it is for all of you to enjoy too!

    Finding gluten free crackers that taste like Ritz used to be a challenge, but Schar Gluten Free Entertainment Crackers and Lance Gluten Free Original Crackers taste so much like the real deal that your whole family can enjoy this casserole without even realizing it’s gluten free!

    What ingredients do you need to make broccoli cheese casserole gluten free?

    • 16 ounces broccoli florets, washed and cut into bite sized pieces
    • 8 ounces Velveeta cheese
    • 8 tablespoons (1 stick) butter, divided
    • 1 bag Schar Gluten Free Entertainment Crackers or 1 box Lance Gluten Free Original Crackers

    How to make gluten free broccoli cheese casserole:

    1. Preheat oven to 350°F
    2. Place broccoli in a large pan and add about 1 inch of water to the bottom. Cover with a lid and turn heat to medium-low. Simmer for about 15-20 minutes, until broccoli is tender
    3. Drain broccoli and add to an 8x8 or 9x9 casserole dish (no need to grease it)
    4. Cut 4 tablespoons butter and 8 ounces Velveeta cheese into small cubes. Scatter the cubes over the broccoli
    5. Using your hand or a meat tenderizer, crush bag of crackers into small pieces. Melt 4 tablespoons of butter and mix with crushed crackers in a medium mixing bowl
    6. Top broccoli, cheese, and butter with the cracker mixture
    7. Bake in oven at 350° for about 20-25 minutes, until cheese has melted and crackers are golden
    8. Store leftovers in an airtight container in the fridge for up to 3 days

    How to store leftover broccoli cheese casserole:

    Store leftovers in an airtight container in the fridge for up to 3 days.

    Freeze leftovers for up to 3 months. Thaw overnight in fridge before reheating.
