Every morning during our stay at Disney’s Caribbean Beach Resort, I walked over to Centertown Market and ordered the avocado breakfast bowl. It was delicious, filling, and exactly what I wanted before a day of walking around the parks. Crispy potatoes, eggs, black beans, cheese, pico de gallo, and creamy avocado all in one bowl? Yes, please.
Naturally, when I got home, I had to recreate it. The only thing I changed was adding breakfast sausage. I use Butterball turkey breakfast sausage for extra protein, and that little addition makes this bowl perfection.
This Disney-inspired avocado breakfast bowl brings a little vacation magic into an ordinary morning. You do not need fancy ingredients or complicated instructions. An air fryer, a skillet, and a few grocery-store shortcuts are all you need.

How to Make an Avocado Breakfast Bowl
1. Cook the tater tots
Cook your tater tots according to the package directions. I use the air fryer because it makes them crispy with very little effort. Follow the package’s air-fryer instructions when provided, and shake the basket as needed so the tots cook evenly.
You want them golden and crisp before adding the toppings. They are the foundation of the bowl, and that crunch is part of what makes it so good.
2. Warm the black beans and sausage
Make this easy on yourself: put the cooked black beans in a microwave-safe bowl and microwave until hot, stirring as needed. If you are using canned beans, drain and rinse them first.
You do not need to cook an entire separate batch just for breakfast. Save the leftover beans in a covered container in the refrigerator for tomorrow’s bowl.
Prepare the turkey sausage according to its package directions, then slice it into bite-size pieces.
3. Cook your eggs
Scramble three eggs in a nonstick skillet, seasoning with salt and pepper to taste. I keep mine simple because the other toppings bring plenty of flavor.
For a lower-fat option, use one whole egg plus two egg whites instead of three whole eggs. You still get the flavor of the yolk and protein from the whites while reducing the fat in your bowl. You can absolutely make your eggs however you like them. A fried egg with a runny yolk would be great here, creating a little sauce as you break into it.
4. Build your bowl
Add the hot tater tots to a serving bowl and sprinkle the shredded cheddar over them. The heat helps soften the cheese.
Top with the warm black beans, turkey sausage, pico de gallo, and scrambled eggs. Finish with half a mashed avocado or ¼ cup of guacamole. Grab a fork and enjoy while the potatoes are still crispy.
My Favorite Shortcut: Guacamole Cups
Fresh avocado is delicious, but sometimes convenience wins. I use the individual guacamole cups because they make this breakfast so easy.
There is no waiting for an avocado to ripen or cutting one open only to discover it has gone bad. Just open a cup and spoon it over the bowl. Check the portion size, since some cups contain more than ¼ cup.
Between frozen tots, canned black beans, prepared pico, and guacamole cups, this feels like a restaurant breakfast without requiring a restaurant-sized effort.

Making It Gluten Free and Dairy Free
One thing I appreciated about this breakfast at Caribbean Beach Resort was having an option that could accommodate my food needs. If you stay there and have food allergies, ask the Centertown Market team about preparing the avocado breakfast bowl for your specific allergies, including gluten and dairy.
At home, making it dairy free is simple: skip the cheese or substitute dairy-free cheese. Cook the eggs without butter or milk, and check your sausage and other ingredient labels.
For gluten-free preparation, use gluten-free ingredients and clean cooking equipment. Potatoes themselves are gluten free, but packaged tots can contain additional ingredients. Always check the actual products you are using.
